thanks for the tip of swapping out the DOT 4 for 5.1
and an easier way to get the pads back into the caliper

When running one organic pad and one metallic pad, is there a particular order which I should run those pads, eg on the front, right side organic, left side metallic and on the rear it should be the reverse?

Doesn’t matter, just keep an eye on the pads as they will wear differently and replace them as need be.
